At Renoir, deemed a in 2009 by Guide Debeur, pastry chefs transform sugar, vanilla, and dough into liège waffles at customers’ tables. These Belgian delicacies, which may date back to the 17th century, receive a sprinkling of crispy pearls of caramelized sugar and emit a sweet vanilla aroma throughout the dining room. The chefs use a family recipe to make batter from scratch every morning in a selection of flavours such as bourbon vanilla that change each month. Customers can decorate their warm waffles with spoonfuls of hazelnut-chocolate spread, jam, or whipped cream before devouring them. Between bites, patrons sip hot chocolate, tea, or coffee. Brown and beige tones warm up the uncluttered lines of the restaurant’s decor, and the dining room’s pearlescent lighting recalls the paintings of Pierre-Auguste Renoir.
