To start feasts, chefs stir blue cheese and lamb in the churu soup and sprinkle golden shrimp pakoras with cilantro and ginger. Guests devour sha-balebs, fried beignets stuffed with beef, or try the vegetable or cheese Tibetan-style ravioli known as momos. Indian culinary traditions take form in lamb biryani with basmati rice and curry chicken that comes in two levels of spiciness.
