White tablecloths greet diners at Restaurant Itamea, each one a blank canvas awaiting the colourful dishes about to populate its surface. As plates from the tasting menu for two are set down, guests use chopsticks to pluck generous chunks of meat from their soup, such as crab or shrimp from the sweet ‘n’ sour soup. The salad course offers such land-and-sea combinations as the grilled salmon salad and a crunch of red pepper and yellow radish gracing the octopus salad. As the opening courses disappear from tables, a sushi chef follows his inspiration to create a 36-piece sushi combo that blends sushi styles such as futomaki, nigiri, maki, and hosomaki to create an oceanic feast. Some popular sushi items that may appear in the platter include the imperial futomaki with crispy tempura shrimp and creamy avocado or the angel maki and its smoked-salmon garnish.
