Poached salmon cutlets swim beneath a tasty sauce of vermouth and dill ($28 à la carte, $40 tasting), and a 6-ounce filet mignon of Angus beef reposes proudly beneath a brandy-and-three-pepper-sauce blanket ($38 à la carte, $50 tasting).
