Behind the counter at Suisen Sushi, cooks follow Japanese culinary traditions in cutting, seasoning, and marrying fresh ingredients while visitors sip wine they bring from home. The journey starts with a vegetarian, shrimp, or salmon miso soup followed by appetizers such as pizza sushi, whose thin tempura rice crust supports smoked salmon, tobiko, masago, and red tuna. Next, the chef decorates plates with five pieces of one of his house specialties such as the Blue Note’s red-tuna tartare mixed with tempura or the Samurai plate’s combination of tuna, creamy avocado, and crunchy cucumber. While diners admire the floral arrangements and Japanese-inspired art that grace the bright white walls, the kitchen staff assembles 28-piece sushi-and-maki samplers and fries fresh-fruit beignets for dessert.
